1 cup dates (pitted, soft – soak in warm water if needed)
-
½ cup almond flour
-
½ cup quick oats
-
¼ cup coconut chips
-
2 tbsp coconut oil
-
2 tbsp vanilla protein powder
-
1 tbsp hemp seeds
-
2 tbsp coconut milk (add more if needed for blending)
-
2 tsp Goddess Greens powder
For coating:
-
100 g mylk or dark chocolate (melted - try Sweet William, or Whittakers Dark Ghana)
-
Freeze-dried raspberries & boysenberry powder (we love Little Beauties)
Method
-
Blend the base: In a food processor, add dates, oats, almond flour, coconut chips, coconut oil, protein powder, hemp seeds, coconut milk, and Goddess Greens powder. Blitz until sticky and well combined.
-
Shape: Roll into bite-sized balls and place on a lined tray. Chill for 15–20 minutes to firm up.
-
Coat: Dip each ball in melted chocolate, letting excess drip off.
-
Finish: Roll immediately in crushed freeze-dried raspberries and boysenberry powder.
-
Set & enjoy: Return to the tray and allow to set. Store in the fridge in an airtight container for up to 1 week.
